Foodie Friday – Paleo Pumpkin Muffins

In keeping with my fall baking theme from last Foodie Friday, I thought I’d share a tried & true recipe that I love…Paleo Pumpkin Muffins!

These bad boys pack so much flavor & are such a tasty treat beside your coffee in the morning, as a snack mid afternoon, or for a little dessert!

Your add-in possibilities with these are endless, too!  Add some walnuts, raisins, dried cranberries, or even some mini-chocolate chips!

Paleo Pumpkin Muffins

Ingredients:

  • 1 1/2 c almond flour
  • 3/4 c canned pumpkin
  • 3 large eggs
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1/8 tsp salt
  • 1/4 c honey
  • 2 tsp almond butter
  • optional add-ins – walnuts, raisins, dried cranberries, mini-chocolate chips

Preheat oven to 350 degrees.  Spray muffin tins with coconut oil or line with muffin cups.  Mix all ingredients and pour evenly into muffins tins.  Bake for 25 minutes.
