Good news, you’ve made it to Friday!! 🙂 Happy weekend!
This week’s Foodie Friday is a super tasty recipe to serve up as a delish side dish to any protein of your choice! I get so tired of the same ol’ veggies or boring salads to accompany my main dish, but this salad has a distinct taste and is crisp & refreshing! Thanks to Lauren for sharing, it’s definitely become a staple in our house!
- 1 bunch of kale
- 3 tbsp chopped onion (I use 1/2 tsp onion powder)
- 2 tbsp minced garlic
- 1 tbsp olive oil
- Juice of 1 lemon
- 2 tbsp shredded parmesan (I’ve only used feta – so good! Leave off cheese to be more Paleo friendly.)
Throughly rinse & dry your kale & chop into bite size pieces. Whisk together onion, garlic, olive oil, juice of lemon and cheese. Pour your dressing over the kale & massage until the kale is slightly wilted. Refrigerate until time to serve or serve immediately.
