Happy Foodie Friday friends!! Today I’m bringing you a recipe from my bloggy friend, April, over at A.Liz Adventures!
This is her super easy, pretty much Paleo Harvest Roast. How delish does that look!?! Yeah, it’s on the menu for Saturday night!
Harvest Roast with minor adaptions
- 1 lb butternut squash, cubed
- 1 medium baking apple, cored & cubed
- 1/3 c craisins (unsweetened)
- olive oil
- 3 tbsp grassfed butter (or ghee to be more Paleo-esque)
- 3 tbsp honey
- 1/4 c pecans, finely chopped
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
Preheat oven to 400 degrees. Toss your butternut squash, apple, and craisins in a bit of olive oil and spread out on a cookie sheet. Roast for about 20 mins stirring occasionally. Meanwhile, combine butter/ghee, honey, pecans, nutmeg & cinnamon in a small bowl. Remove squash from oven and pour honey mixture over squash. Stir to coat. Return to oven for another 10 minutes or until cooked through. Remove & serve.
Yields – HUGE amount. 🙂
